Last Night's Dinner

Tuesday Dinner

So last night was Taco Tuesday, only I didn't want to turn on the oven. It's freakin hot. I took 2 avocados, some edamame, and a can of white beans, a little bit of cream, some garlic, salt, pepper, and made a rough puree in the food processor. Then took broccoli slaw from the store and tossed it with an adobo sauce/sour cream crema. Turn on the electric stove and toss the tortillas on the coil for a little burn, spread the schmear, roll with the broccoli slaw, and YUM! The kids liked it, the adults liked it- everyone wins! And it's SO freaking easy.

It's definitely Gin and Tonic time! An eggplant swizzle adds a dash of color, and a basil sprig kicks in a fresh flavor. Those teeny limes, along with all the produce, came in our CSA basket today

Breakfast

Not fair, probably true. From my pecan caramel french toast for breakfast yesterday, amazing pulled pork last night for dinner, now this... I should by all rights weigh 300 LBS. Somehow, it just works for me

Salmon in phyllo

These delicious little niblets are basted in butter before being wrapped in phyllo dough. What you DON'T see is a red wine reduction under them. When they come out and they have the yummy red wine sauce, it's a powerful sauce- just a little bit adds a delicious compliment :)

Amazing little chocolate cakes

So you take incredible chocolate cake, and use a pastry ring to cut out 2 little circles. Make a chocolate mousse and put a big thick layer between them. Then pour delicious ganache all over it. Then carefully roll the entire thing in chocolate shavings.
